
2 1/2 cups chopped bananas 1 3/4 cups
sugar 2 eggs 3/4 cup oil 2 cups chopped pecans 2 1/4 cups oat bran
flour 1/2 tsp baking soda 1 teaspoon baking powder 1 teaspoon
cinnamon 1 teaspoon salt Mix bananas and sugar. Let stand Beat 2 egg
whites until stiff Add egg yolks, stir, then add oil to mixture, beat well
and let sit. Mix 1 1/2 cup pecans, flour, soda, salt and cinnamon. Pour
egg mixture over bananas and add dry ingredients. Stir and pour into large
(Texas size muffins)muffin pan, lined with muffin papers. Mix the other
1/2 cup chopped pecans with 1 tsp. cinnamon and 1/4 cup brown
sugar----sprinkle over top of muffins. Bake at 325 degrees for about 25-30
minutes if using large muffin pan.
Check to see if toothpick comes
out clean, then they or done. |
