Coconut Pie

5 tablspoons flour
1/2 cup sugar
1/2 teaspoon salt
3 cups milk
3 eggs
1 1/2 teaspoons vanilla
1/2 cup coconut flakes
1- 9 inch pie shell

Mix flour, sugar, salt and milk
in pan. Cook over medium heat
to a boil. Boil for one minute. Beat
Separate egg whites from egg yolks.
Beat egg yolks lightly. Pour  some
of the hot mixture into yolks and
mix. Return  to pan. Cook for
another minute, add vanilla and
coconut flakes. Pour into pie shell.

Meringue
Beat egg whites until foamy, add
2 teaspoons of sugar, beat until stiff.
Spread meringue over pie filling.

 Bake at 350 degrees until
 meringue is lightly brown.
