Squash Casserole


2 pounds yellow squash cut into small pieces

1 cup chopped onions

1 tsp. salt

1/4 tsp. pepper


Water

4 tablspoons butter

1 cup crushed saltine crackers

1/2 cup milk

1 cup shredded cheese

1/2 cup pecans or buttered bread crumbs

Add first 4 ingredients to a pan, add a little water.

Cover and cook slowly until tender.

Drain, stir in butter, adjust seasoning to taste.

Butter baking dish, stir crackers into mixture.

Place into a baking dish.

Pour milk over squash 

Sprinkle with cheese and pecans or bread crumbs.

Bake 350 degrees uncovered ,

for about 20 minutes until milk is absorbed.
